I love those little metal storage or pretty jars that always contains some sweety or salty for snacks. To my mind a little storage with cookies could creat a hearth warming atmosphere in our kitchen.
During Christmas time or during any festives I desire much more cookies next to my tea or coffee. Here’s my newest (and easy) recipe to fill our little metal storages.
2 tbs chia seed
2 tsp sodabicarbonate
1 lemon zest
½ lemon juice
2 tbs mascarpone
100gr minced walnut
Preheat the oven to 150 °C.
Take a big bowl and mix all ingredients together. But be patience with the coconut oil. 🙂
If you want you can leave the cia seed, but it is really good source of protein, vitamins and Omega3. With chia seed this cookies can be more healthy!
And if you love the more sour flavour add more lemon juice to the dough.
When the cookies dough is ready, cover in a plastic foil and leave in the fridge for 30 mins. After 30 mins roll out the dough to 0,5 cm between the baking paper than use the cookies cutter.
Place the cookies to a baking sheet and bake them for 15-20 mins on 180 °C. Let the cookies to cool out than store them in a jar or a metal storager.
