I served the chicken with rise, because I’m on law carb diet. If you’d like to follow the original recipe and eat like a real italina serve it with bruschetta! 

Ingredients for 4:

4 chicken thigh
2 bough rosmary
6 cloves garlic
oatmeal flour or rice flour
olive oil
salt, pepper, parsley
500ml tomatosauce
some pieces bay leaves

Steps:

Season the chicken with salt and pepper and dust with oatmeal flour.

Put some oil in a large frying pan and place on a medium high heat. When hot add the floured chicken and fry well on each side until golden brown.

Reduce the heat to medium and add a cup of water, rosmary and 2 cloves of garlic. Cook until the flesh come away easily from the bone. tomatosauce.

Tomato sauce:

Put some oil in a sauce pan and add 2 cloves of chopped garlic. Add tomato sauce and basils. Cook for 20 mins then mix with a handblender.

Season with salt and freshly grounded pepper.
